In our way of cooking, it’s rare to use exact measurements (though we’ve done our best to use precise measurements in this cookbook).
Instead, when cooking Thai or Akha food, we tend to follow this saying: “Put everything in the pot, and cook with your heart!” We also use the magic of cooking, which is salt and sugar.
