Curry Paste

from scratch

In the package that you received during our class, there are ingredients which are difficult to find outside of Thailand, you can use these to make more curry paste if you wish to make it from scratch.
The other ingredients for curry paste (that you see in our cookbook curry recipes) you can usually find fresh, so make sure to get these before starting your curry paste.
Included in bag: 
  • 3 piece of galangal
  • 3 kaffir lime leaf
  • 2 chillies
  • Pieces of lemongrass

To make curry paste using the dried herbs: 
  • 1/2 piece of galangal
  • 1/2 kaffir lime leaf
  • 2-3 pieces of lemongrass

Direction:
  1. Soak them in warm water for about 10-15 minutes.
  2. Drain water out.
  3. Mix them with the rest of the curry paste ingredients you see in our CookBook.
You can also use these herbs to make:
Chicken & Coconut Milk Soup
Hot & Sour Prawn Soup

Use the quantity as per our CookBook, without soaking in water first.
