Akha Soup – This soup consists of a clear, simple broth, but it has a refreshingly complex flavour thanks to the lemongrass and coriander. If you like lemongrass tea, you’re sure to enjoy this soup. We have a bit of fun with this word in class: “fuk” may sound like a naughty word in English, but in Thai it refers to any squash or gourd-like vegetable. It’s completely innocent!
Steps:
- Place all the ingredients in a pot and cook on high heat for 7 to 10 minutes, until the winter melon becomes soft.
- Turn off the heat and add the sweet basil.
